Cut the top off the garlic bulb. Add the grape tomatoes and the prepared garlic bulb to an air fryer basket. Drizzle generously with olive oil. Season with salt and black pepper.

Air fry at 200°C for 12 minutes, or until the tomatoes blister and the garlic softens significantly.

Carefully remove the roasted tomatoes and garlic from the air fryer. Let them cool slightly for about 5 minutes.

Squeeze the soft roasted garlic cloves out of their skin into a blender cup. Add the roasted tomatoes to the same blender cup. Blend until the mixture is smooth.

Pour the blended tomato and garlic sauce into a medium pan over medium heat.

Stir in the chopped parsley (if using), fresh basil, chili flakes (to taste), and grated Parmesan cheese.

Simmer the sauce for 2 minutes, then add a little reserved pasta water to reach your desired consistency.

Add the cooked pasta of your choice to the pan with the sauce and toss well to coat. Serve hot and enjoy!
