Place the cubed salmon in a medium bowl. Add the olive oil, salt, black pepper, and paprika. Toss well to ensure all salmon pieces are evenly coated with the seasonings.

Heat a large pan over medium-high heat. Once hot, add the seasoned salmon cubes in a single layer. Cook for 2 to 3 minutes per side, until golden brown and cooked through.

Pour the sweet chili sauce over the cooked salmon in the pan. Brush or toss the salmon with the sauce and continue to cook for 1 more minute, allowing the sauce to become sticky and glaze the salmon.

While the salmon cooks, prepare the dip. In a separate small bowl, combine the plain Greek yogurt, lime zest, lime juice, and grated garlic clove. Add salt to taste.

Stir all the dip ingredients together until smooth and well combined.

Serve the sweet chili salmon bites warm with the lime yogurt dip on the side. Garnish with chopped parsley or cilantro, if desired. These are great as an appetizer or served over rice.
