In a large mixing bowl, combine the ground beef, 2 tablespoons soy sauce, 1 teaspoon sesame oil, and 1/2 tablespoon gochujang. Add the finely diced onion, minced garlic cloves, grated ginger, and chopped green onion (greens only). Using your hands, thoroughly mix all the ingredients until well combined.

Take small, even portions of the beef mixture and firmly press and mold them around skewers to form elongated, cylindrical kabob shapes. Place the formed kabobs on a baking sheet or plate. Repeat until all the beef mixture is used.

Heat 2 tablespoons of canola oil in a large pan over medium heat. Once the oil is hot, carefully place the beef kabobs into the pan. Cook the kabobs, turning occasionally, until they are browned on all sides and cooked through, about 10-12 minutes.

While the kabobs are cooking, prepare the glazing sauce. In a separate small bowl, combine 2 tablespoons soy sauce, 2 tablespoons Japanese BBQ sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon sesame oil, and 1/4 teaspoon white pepper. Whisk all the sauce ingredients together until they are fully incorporated and smooth.

Once the kabobs are cooked through, generously brush them with the prepared sauce while they are still in the pan. Flip the kabobs to ensure they are coated on all sides. Continue to cook for a short period, about 2-3 minutes, allowing the sauce to heat through and slightly caramelize, creating a glossy finish.

Place a warm flour tortilla on a serving surface. Lay one glazed KBBQ beef kabob onto the tortilla. Optionally, drizzle additional sauce over the kabob and garnish with fresh chopped green onions. Roll up the tortilla around the kabob to create a wrap and serve immediately.
