Preheat your oven to 375°F. Line a large baking sheet with parchment paper for easy cleanup.

In a large bowl, toss the sourdough bread cubes with the 1/4 cup of melted unsalted butter until evenly coated. Set aside.

In a medium saucepan over medium heat, melt the 2 tablespoons of unsalted butter. Add the diced apples, light brown sugar, granulated sugar, 1 teaspoon of ground cinnamon, ground nutmeg, and lemon juice. Cook, stirring occasionally, for 5 to 7 minutes, or until the apples have softened slightly but still hold their shape. Remove from heat and stir in the vanilla extract.

Pour the warm apple filling over the buttered sourdough cubes. Gently fold the mixture with a spatula until the bread cubes are well coated with the apple mixture.

Spread the coated sourdough and apple mixture in a single layer on the prepared baking sheet.

Bake for 20 to 25 minutes, stirring halfway through, until the sourdough bites are golden brown and slightly crispy. Keep an eye on them to prevent burning.

While the bites are baking, if using, whisk together the powdered sugar and 1/2 teaspoon of ground cinnamon in a small bowl for dusting.

Remove from the oven and let cool for a few minutes. Dust with the cinnamon-sugar mixture, if desired, before serving warm.
