Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a pan, sauté the finely diced red onion and minced garlic until soft, about 3-5 minutes. Add the fresh spinach and cook until wilted, another 2-3 minutes. Season with 1 teaspoon of the “When Life Gives You Lemons” seasoning and salt, to taste. Remove from heat and stir in the softened cream cheese, shredded Parmesan, and panko breadcrumbs until well combined.

Season the portioned salmon fillet pieces with the remaining 1 teaspoon of “When Life Gives You Lemons” seasoning and salt, to taste.

Roll out the thawed puff pastry sheet and cut it into 6 equal squares. Place a scoop of the spinach mixture onto the center of each pastry square, then top with a seasoned piece of salmon.

Fold two opposite corners of the pastry over the salmon and spinach mixture, pressing down lightly. Then, fold the other two corners over to fully enclose the filling, forming a sealed parcel. Seal the edges, optionally using a fork to crimp them for a decorative finish. Make a few light scores on top of each wellington with a knife for decoration. Transfer the prepared wellingtons to the lined baking sheet.

Whisk the large egg in a small bowl to create an egg wash. Brush the tops of the wellingtons with the egg wash and sprinkle with everything bagel seasoning if desired.

Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed.
