Line a baking sheet with parchment paper or a silicone mat. This will prevent sticking and make it easy to remove the bark once frozen.

Peel and mash the 3 overripe bananas in a bowl until smooth. Spread the mashed banana evenly onto the prepared baking sheet, forming a thin, flat layer. Aim for a thickness of about 1/4 inch.

Evenly spread the peanut butter over the mashed banana layer. You can warm the peanut butter slightly in the microwave for 15-30 seconds to make it easier to spread if it's too stiff.

Place the baking sheet in the freezer and freeze until the banana and peanut butter layer is solid, which will take approximately 1 to 2 hours.

While the banana layer is freezing, melt the dark chocolate. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or using a double boiler method until smooth and fully melted.

Once the banana and peanut butter layer is solid, remove it from the freezer. Pour the melted dark chocolate evenly over the frozen layer, spreading it quickly before it sets.

Immediately sprinkle the chopped salted peanuts over the melted dark chocolate.

Return the baking sheet to the freezer and freeze again until the dark chocolate is completely set and the entire bark is solid, about 1 hour.

Once fully frozen, remove the bark from the freezer. Lift it off the parchment paper and break or chop it into desired pieces. Store the bark in an airtight container in the freezer.
