In a heatproof measuring cup or bowl, steep the chamomile tea bags in 1 cup of hot water for 5 minutes. Remove and discard the tea bags.

Add the honey and freshly squeezed lemon juice to the warm chamomile tea. Stir until the honey is fully dissolved.

If the mixture has cooled significantly, microwave it for 30 seconds to ensure it is warm enough to dissolve the gelatin. It should be warm but not boiling.

Sprinkle the unflavored beef gelatin over the warm liquid. Whisk continuously for 2-3 minutes until the gelatin is fully dissolved and no clumps remain. Ensure the mixture is smooth.

Arrange the halved grapes in your desired mold. A small baking dish (such as an 8x8 inch pan for thinner bars, or a loaf pan for thicker bars) or individual silicone molds work well.

Carefully pour the gelatin mixture over the grapes in the mold, ensuring the grapes are evenly distributed and covered.

Transfer the mold to the refrigerator and chill for at least 4 to 6 hours, or until the jelly is completely set and firm to the touch.

Once set, cut the jelly into bars or desired shapes. Store the Chamomile Grape Jelly Bars in an airtight container in the refrigerator for up to 4 days for best freshness and texture.
