In a large bowl, combine the bite-sized chicken pieces with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Toss well to ensure the chicken is evenly coated.

Add 3 tablespoons of corn starch to the seasoned chicken. Toss thoroughly until all chicken pieces are evenly coated with the corn starch.

Arrange the coated chicken pieces in a single layer in your air fryer basket. You may need to cook in batches depending on the size of your air fryer to avoid overcrowding.

Air fry the chicken at 400°F for 10 minutes.

While the chicken is air frying, prepare the sauce. In a separate medium bowl, combine 2 tablespoons of ketchup, 2 tablespoons of honey (if using), 1 tablespoon of gochujang, 2 cloves of minced garlic, 1 tablespoon of soy sauce, and 2 tablespoons of water.

Whisk all the sauce ingredients together until they are well combined and smooth.

After the initial 10 minutes of air frying, carefully flip the chicken pieces in the basket.

Continue to air fry for an additional 6-8 minutes, or until the chicken is cooked through, golden brown, and crispy.

Once the chicken is done, transfer it immediately to a clean large bowl.

Pour the prepared Korean fried chicken sauce over the hot air-fried chicken.

Toss the chicken gently to ensure each piece is thoroughly coated with the sauce.

Transfer the sauced chicken to a serving dish and garnish with sesame seeds and chopped green onions before serving.
