In a large bowl, combine the raw almonds, pumpkin seeds, sunflower seeds, dried cranberries, and unsweetened coconut flakes. Mix these ingredients thoroughly with a spatula until well combined.

In a small saucepan, heat the honey, maple syrup, and sea salt over low heat. Stir continuously with a whisk until the mixture becomes glossy and slightly thickened, about 3-5 minutes. Do not boil.

Pour the warm syrup mixture over the prepared nut and fruit mixture in the large bowl. Mix well with a spatula until all ingredients are evenly coated with the syrup.

Line an 8x8 inch baking tray with parchment paper, leaving an overhang on the sides for easy removal. Transfer the mixture into the prepared baking tray and press it down very firmly and evenly to ensure a compact layer. This step is crucial for clean bars and a good crunch.

Place the tray in the freezer and freeze for at least 2 hours, or until the mixture is completely solid.

Once the solid mixture is removed from the freezer, lift it out of the tray using the parchment paper overhang. Place it on a cutting board and cut it into individual bars of your desired size. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth, or use a double boiler.

Dip each bar into the melted dark chocolate, ensuring it's evenly coated. Immediately after dipping, place the bar on a parchment-lined baking sheet and sprinkle a touch of fleur de sel on top of each chocolate-coated bar.

Return the chocolate-coated bars to the freezer and freeze for another 15 minutes, or until the chocolate shell has hardened perfectly.

The bars are now ready to be enjoyed. Store any remaining bars in an airtight container in the refrigerator or freezer.
