Lay one nori sheet, shiny-side down, on a bamboo sushi rolling mat. Spread about 3/4 cup of sushi rice evenly over the entire surface of the nori sheet, leaving a small border at the top edge if desired, but for an inside-out roll, cover completely.

Carefully flip the nori sheet so the rice is now on the outside and the nori is facing up. Arrange a line of sliced avocado, followed by a line of crab meat, and then a line of cucumber sticks across the nori, about 1 inch from the edge closest to you.

Using the bamboo mat, carefully roll the sushi tightly from the bottom edge upwards to form a compact cylindrical roll. Apply gentle, even pressure as you roll to ensure the ingredients are secure.

Repeat steps 2-4 for the remaining 3 nori sheets and ingredients.

Using a sharp, damp knife, slice each rolled sushi into approximately 8 individual pieces. Arrange the cut sushi pieces neatly on the prepared heat-proof plate or baking sheet.

Place a generous portion of chopped lobster meat on top of each sushi piece, ensuring even distribution.

Take the spicy mayonnaise and squeeze it generously in a zigzag pattern over the lobster and sushi pieces on the plate. Follow with a drizzle of eel sauce over the creamy sauce.

Place the plate of prepared sushi into the preheated oven or under the broiler. Bake for 5-8 minutes, or broil for 2-4 minutes, until the lobster and sauces are hot, bubbly, and lightly caramelized on top. Watch carefully to prevent burning.
