Preheat the oven to 400°F. Grease a 9x13-inch baking dish generously with butter.

Unroll the premade pie dough and roll it out into a large rectangle. Slice the dough into six equal squares.

Place one peeled and cored tart green apple in the center of each dough square, ensuring the hollowed core faces up.

Cut the 1/2 cup of unsalted butter into 8 thin pats. Insert one pat of butter into the hollowed core of each apple. Reserve the remaining 2 pats of butter for the sauce.

In a small bowl, combine the 1/2 cup of brown sugar, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg. Sprinkle this mixture evenly over the apples and into their cores.

Moisten your fingers with water. Bring each corner of a dough square up to the center over the apple. Pinch the seams of the dough together to seal the apple inside, forming a dumpling. Carefully transfer the wrapped apple dumplings to the prepared 9x13-inch baking dish.

In a saucepan, combine the 2 cups of water, the 2 cups of brown sugar (reserved for the sauce), the 1 teaspoon of vanilla extract, and the remaining 2 pats of reserved butter. Bring the mixture to a boil over medium heat.

Once boiling, reduce the heat and let the sauce simmer for 3-4 minutes, or until the brown sugar has completely dissolved.

Pour the prepared sauce evenly over the apple dumplings in the baking dish.

Place the dish in the preheated oven and bake for 50-60 minutes, or until the dumplings are golden brown and the apples are tender.

Remove the apple dumplings from the oven. Serve them warm, spooning extra sauce from the baking dish over each dumpling.
