Heat 1 tablespoon of sesame oil in a large pan or wok over medium-high heat.

Add the 1 pound of sliced beef to the hot pan.

Cook the beef until it is browned on all sides. Once browned, remove the beef from the pan and set it aside.

Add the 1/2 sliced yellow onion to the same pan. Sauté the onion for 2 to 3 minutes until it has softened.

Add the 2 cloves of minced garlic to the pan. Sauté for an additional 30 seconds until the garlic becomes fragrant.

Stir in the 1 cup of chopped kimchi. Cook the kimchi for 3 to 4 minutes, stirring it occasionally.

Return the previously cooked beef to the pan with the vegetables.

Add 1 tablespoon of gochujang, 1 tablespoon of soy sauce, 1 teaspoon of sugar, and 1/2 teaspoon of black pepper to the pan.

Stir all the ingredients together thoroughly until they are well combined and heated through.

Serve the Kimchi Beef Stir Fry immediately over a bed of cooked rice.

Garnish the dish with chopped green onions and a sprinkle of sesame seeds before serving.
