Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners.

Peel and grate the 3 large carrots. Set aside.

In a large bowl, combine the all-purpose flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Whisk these dry ingredients together until well combined.

In a separate bowl, combine the brown sugar, white sugar, vegetable oil, milk, eggs, and vanilla extract. Whisk the wet ingredients until thoroughly mixed.

Pour the wet ingredient mixture into the bowl with the dry ingredients. Use a spatula to gently mix until just combined, being careful not to overmix.

Add the grated carrots to the batter and fold them in until evenly distributed.

Fill each muffin liner with the prepared batter, about two-thirds full.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Once baked, remove the muffins from the oven and transfer them to a wire rack to cool completely. This will take at least 30 minutes.

While the muffins are cooling, prepare the cream cheese frosting. In a bowl, combine the cream cheese, butter, vanilla extract, and powdered sugar.

Use an electric mixer to beat the frosting ingredients until the mixture is smooth and creamy. If the frosting is too thick, add a tiny splash of milk; if too thin, add a little more powdered sugar.

Once the muffins have cooled completely, spread or pipe the cream cheese frosting on top of each muffin.
