In a large bowl, combine the ground pork, finely chopped cabbage, sliced green onions, grated ginger, soy sauce, sesame oil, white pepper, salt, granulated sugar, cornstarch, and 2 tablespoons of water.

Mix all the ingredients thoroughly with a spoon, then use your hands to ensure it is nicely combined and sticky. This helps bind the filling together.

Add 1 tablespoon of vegetable oil to a 10-inch non-stick pan and spread it evenly. Arrange 8-10 dumpling wrappers in the pan, overlapping them slightly to form a circular base, covering the entire bottom of the pan.

Spoon the prepared filling onto the layer of wrappers in the pan and spread it out evenly over the surface, leaving about a 1/2-inch border around the edges.

Place another 8-10 dumpling wrappers on top of the filling, overlapping them as done for the base, ensuring the filling is completely covered.

Gently press down the edges of the top wrappers to seal them with the bottom layer and the filling. This creates a large, enclosed dumpling.

Pour 1/4 cup of water into the pan. Cover the pan with a lid and steam over medium heat for about 5 minutes, or until the wrappers are translucent and the filling is mostly cooked.

Remove the lid. Add the remaining 1 tablespoon of vegetable oil around the edges of the dumpling in the pan. Increase the heat to medium-high and allow it to cook, uncovered, until the bottom is golden brown and crisped up, about 5-7 minutes.

Once the bottom is crispy, carefully slide the large dumpling onto a serving plate. Cut it into wedges and serve immediately with your favorite dipping sauce.
