Slice 500g of beef into thin strips. In a medium bowl, combine the sliced beef with 2 teaspoons of baking soda and 3 tablespoons of cornstarch. Mix thoroughly by hand until the beef is well coated.

Prepare the vegetables: slice the garlic, ginger, Holland onion, bell peppers (red and green), and mushrooms.

In a separate small bowl, combine 1 tablespoon of sweet soy sauce, 1 teaspoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of freshly ground black pepper, 1 teaspoon of sugar, 1 teaspoon of salt, 1 tablespoon of cornstarch, and 3 tablespoons of water. Stir well with a spoon until all ingredients are combined and the cornstarch is dissolved.

Heat 2 tablespoons of cooking oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry until it is cooked through and lightly browned, about 3-4 minutes. Once cooked, remove the beef from the pan and set aside.

Add 1 tablespoon of cooking oil to the same pan if needed. Add the sliced garlic and ginger and sauté for 30 seconds until fragrant.

Add the sliced Holland onion to the pan and continue to sauté for 1-2 minutes until slightly softened.

Add the sliced bell peppers to the pan and stir-fry with the other aromatics and onion for 2-3 minutes until they start to soften but still retain some crispness.

Finally, add the sliced mushrooms to the pan and stir-fry for 2-3 minutes until softened.

Return the cooked beef to the pan with the sautéed vegetables.

Pour the prepared sauce mixture over all the ingredients in the pan. Stir-fry everything together for 1-2 minutes until the sauce thickens and coats the beef and vegetables evenly.

Serve the Stir-Fried Blackpepper Beef immediately in a bowl, garnished with chopped spring onions. Enjoy!
