While the pasta cooks, melt the unsalted butter in a large skillet over medium-low heat. Add the freshly ground black pepper and toast for about 1 minute, until fragrant. Be careful not to burn the pepper.

Add 1 cup of the reserved pasta water to the skillet with the butter and pepper. Bring to a gentle simmer.

Drain the pasta and immediately add it to the skillet with the butter, pepper, and pasta water. Using tongs, toss continuously for 1-2 minutes to coat the pasta.

Remove the skillet from the heat. Gradually add the finely grated Trader Joe's Unexpected Cheddar Cheese (SKU: 078750) to the pasta, tossing constantly with tongs. Add a splash more reserved pasta water, if needed, to create a creamy, emulsified sauce. The key is to keep tossing until the cheese melts into a smooth sauce, not clumpy.

Taste and adjust seasoning with kosher salt and additional black pepper if desired. Serve immediately, garnished with more freshly ground black pepper.
