Cook the sausages: Place the 8 sausages into a frying pan over medium heat. Cook them until they are browned and cooked through, about 10-12 minutes, turning occasionally. Remove from pan and set aside.

Cook the fries: Place the desired amount of french fries into an air fryer. Air fry them according to package instructions, typically for about 18 minutes, or until golden and crispy.

Make the homemade garlic mayo: Mince the 4 garlic cloves finely into a small bowl. Add the 1/2 cup of mayonnaise, 1 tablespoon of freshly squeezed lemon juice, 1 teaspoon of honey, and 1 tablespoon of Dijon mustard to the bowl. Mix all the ingredients together thoroughly until well combined.

Prepare the brioche: Butter one side of each of the 8 slices of brioche bread.

Assemble the first sandwich: Place one slice of buttered brioche (butter-side down) into a clean, heated frying pan over medium-low heat. Lay 1 slice of cheese on top of the brioche in the pan.

Add fillings to the first sandwich: Arrange a layer of cooked fries on top of the cheese. Place 2 cooked sausages on top of the fries. Generously spread some of the homemade garlic mayo over the sausages.

Complete the first sandwich: Place another slice of cheese on top of the garlic mayo. Add another layer of cooked fries on top of the second slice of cheese. Place the second slice of buttered brioche (butter-side up) on top of the fries to complete the sandwich.

Toast the first sandwich: Press down on the sandwich with a spatula. Toast the sandwich in the pan until golden brown on both sides and the cheese is melted and gooey, about 3-4 minutes per side. Repeat steps 5-8 for the remaining 3 sandwiches.

Serve: Remove the sandwich from the pan, slice in half, and serve immediately.
