Preheat your oven to 375°F. Lightly spray a baking dish with cooking spray.

In a large mixing bowl, crack the 2 eggs. Add the 1 1/2 cups of milk, 1/4 cup of maple syrup, and 1 teaspoon of vanilla extract.

Whisk the wet ingredients together until they are well combined.

Add the 3 cups of rolled oats, 1 teaspoon of cinnamon, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt to the wet mixture in the bowl.

Whisk the mixture again until all the dry ingredients are fully incorporated into the wet ingredients.

Pour the oatmeal mixture into the prepared baking dish. Evenly scatter the 2 cups of blueberries over the oatmeal mixture.

In a small pot or microwave-safe bowl, melt the 2 tablespoons of butter. Drizzle the melted butter evenly over the blueberries and oat mixture in the baking dish.

Place the baking dish into the preheated oven and bake for 35–40 minutes, or until the top is golden brown and the oatmeal is bubbly and set.

Once baked, remove the dish from the oven and allow the baked oatmeal to cool completely before covering and refrigerating for meal prep.

To reheat a portion, cut out the desired amount and place it in an air fryer basket. Air fry at 350°F for 5 minutes.

Serve the reheated oatmeal on a plate. Optionally, top with 1 cup of Greek yogurt, drizzle with 1 teaspoon of honey, and sprinkle with a pinch of cinnamon.
