Pat the whole chicken thoroughly dry with paper towels.

In a small bowl, combine 1 tablespoon salt, 1 tablespoon black pepper, 1 teaspoon garlic powder, 1 tablespoon smoked paprika, and 1 tablespoon onion powder. Mix these ingredients well to create the spice rub.

Rub the prepared spice mixture generously all over the chicken, ensuring it is evenly coated.

Add 2 tablespoons olive oil, 1 tablespoon soy sauce, and 1 tablespoon sesame oil to the chicken. Rub these liquids into the chicken to further coat it.

Place the seasoned chicken in an airtight container or a large zip-top bag and marinate in the refrigerator for a minimum of 30 minutes, or preferably overnight for best flavor.

Rinse 2 cups of short grain sweet rice under cold water until the water runs clear.

Transfer the rinsed rice to a pot. Add 2 cups of water and 1 teaspoon of salt.

Bring the water to a boil over high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it cook for 15 minutes.

Remove the pot from the heat and allow the rice to steam, still covered, for an additional 10 minutes. Do not lift the lid during this time.

Fluff the cooked rice with a fork and stir in 1 tablespoon of sesame oil until well combined.

In a small saucepan or pot, combine 1 cup of peeled garlic cloves with 1 cup of olive oil.

Cook the garlic over low heat for 20 to 25 minutes. The garlic should become tender and slightly golden brown, bubbling gently in the oil.

Preheat your oven to 375°F (190°C).

Line a roasting pan or a large oven-safe skillet with parchment paper.

Spread the prepared sticky rice evenly across the bottom of the lined pan, creating a bed for the chicken.

Carefully place the marinated chicken on top of the bed of sticky rice.

Pour the entire contents of the garlic confit (both the garlic cloves and the infused olive oil) over the chicken.

Roast in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes. The chicken is done when its internal temperature reaches 165°F (74°C) when measured with a meat thermometer, and the skin is golden brown and crispy.

Once roasted, remove the chicken from the oven and let it rest for a few minutes before carving.

Garnish the Nurungji Chicken with freshly chopped green onions and a sprinkle of sesame seeds.

Serve the carved chicken alongside the crispy sticky rice from the pan.
