Preheat your oven to 350°F. Line a baking sheet with parchment paper for easy cleanup.

Carefully slice the large loaf of French bread in half lengthwise. Using your fingers or a spoon, gently pinch out some of the soft bread from the center of each half, creating a slight well for the filling. Be careful not to tear through the crust.
In a small microwave-safe bowl or saucepan, melt the 4 tablespoons of unsalted butter. Stir in the 1 tablespoon of minced garlic. Brush this garlic butter mixture generously over the cut surfaces of both French bread halves.

In a medium mixing bowl, combine the chopped crab meat, sliced green onions, soy sauce, farmer cheese, whipped cream cheese, and sour cream. Mix thoroughly until all ingredients are well combined and the mixture is smooth.

Place the prepared French bread halves on the lined baking sheet. Distribute 2 cups of the shredded mozzarella cheese evenly over the garlic-buttered surface of both bread halves.

Evenly spread the crab Rangoon filling over the layer of mozzarella cheese on both bread halves.

Top the crab Rangoon filling with the remaining 2 cups of shredded mozzarella cheese.

Bake in the preheated oven for 12 to 15 minutes, or until the cheese is melted and bubbly and the bread is lightly golden.

Switch the oven to broiler setting (high). Broil the garlic bread for 2 to 3 minutes, watching carefully, until the cheese is golden brown and slightly crispy. Do not walk away, as broiling can quickly burn food.

Remove from the oven, let cool for a few minutes. Drizzle with sweet chili sauce and sprinkle with additional sliced green onions before slicing and serving immediately.
