Place the softened 8 ounce block of cream cheese into a mixing bowl.

Add 1/2 cup of mayonnaise to the bowl.

Add 1 (1 ounce) package of ranch seasoning mix (or 2 tablespoons of homemade ranch seasoning) to the bowl.

Using a spatula, mix these three ingredients together until well combined and smooth.

Add the drained 15 ounce can of Rotel to the cream cheese mixture.

Add the drained 15 ounce can of corn to the mixture.

Stir in 1/2 cup of chopped red onion.

Add 1/2 cup of chopped bell pepper (both orange and red bell peppers are shown).

Add 1/2 cup of chopped cilantro.

Incorporate 1/2 cup of shredded cheddar cheese.

Add 1/2 cup of shredded Colby Jack cheese.

Stir in 1/4 cup of chopped pickled jalapenos.

Add 1/4 cup of bacon bits (or 3-4 slices of cooked and crumbled bacon).

Season the mixture with salt and pepper to taste.

Mix all the ingredients thoroughly with the spatula until everything is evenly distributed.

Serve the finished Cowboy Corn Dip with tortilla chips.
