Cut the chicken breast into small, bite-sized pieces. In a bowl, season the chicken pieces with 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1 teaspoon paprika. Mix thoroughly to ensure all chicken pieces are evenly coated with the spices.

Heat 1 tablespoon of olive oil in a pan over medium-high heat. Once the oil is hot, add the seasoned chicken pieces and cook until they are nicely browned and fully cooked through, about 5-7 minutes. Remove the cooked chicken from the pan and set it aside.

In the same pan, reduce the heat to medium and add 1 tablespoon of butter. Once the butter has melted, add 1 tablespoon of maida (all-purpose flour). Stir continuously for 1 minute to create a roux.

Gradually pour in 1 cup of milk into the roux, whisking constantly to prevent lumps from forming. Continue whisking until the mixture is smooth and starts to thicken.

Add 2 cheese slices and 1/2 cup of mozzarella cheese to the sauce. Continue mixing until all the cheese has melted and the sauce has thickened to a creamy consistency. Stir in 2 tablespoons of mayonnaise until thoroughly combined.

Return the previously cooked chicken pieces to the cheese sauce. Mix well to ensure the chicken is evenly coated with the creamy cheese mixture.

Lay out 4 slices of bread. Generously spread the prepared chicken cheese mixture onto two of the bread slices. Place one cheese slice on top of the chicken mixture on each of these two bread slices. Cover each with the remaining two slices of bread to form two sandwiches.

Toast the assembled sandwiches in a toaster or on a pan over medium heat until they are golden brown on both sides and the cheese inside is fully melted and gooey. Serve immediately and enjoy!
