Cook the egg noodles according to package directions. Drain well and set aside.

In a small bowl, whisk together all the ingredients for the spicy stir-fry sauce: soy sauce, oyster sauce, rice vinegar, sesame oil, Sriracha, brown sugar, and cornstarch. Set aside.

Heat 1 tablespoon of vegetable oil (or some of the reserved tuna oil) in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just set, breaking them into small pieces. Remove the scrambled eggs from the skillet and set aside.

Add the red bell pepper, carrots, and broccoli florets to the hot skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Add the white parts of the green onions, minced garlic, and grated ginger to the skillet. Stir-fry for 1 minute until fragrant.

Add the drained tuna to the skillet and break it apart gently with a spoon. Stir-fry for 1-2 minutes to heat through.

Add the cooked noodles and the scrambled eggs back into the skillet with the tuna and vegetables. Pour the prepared stir-fry sauce over everything.

Toss everything together gently to coat the noodles and ingredients evenly with the sauce. Cook for another 1-2 minutes until the sauce thickens slightly and everything is heated through.

Remove from heat. Garnish with the green parts of the sliced green onions before serving.
