Take each slice of Italian bread and butter both sides. After buttering, generously sprinkle za’atar seasoning onto the buttered sides.

Heat a skillet over medium heat. Place the prepared bread slices in the pan with one buttered and za'atar-sprinkled side facing down. Toast for 3–4 minutes, or until the bread becomes golden and crisp. These toasted sides will form the inside of the sandwich.

Flip the bread slices over in the skillet. On one of the slices, layer fresh mozzarella (sliced), followed by the roughly chopped Castelvetrano green olives. Add an extra sprinkle of za’atar seasoning over the fillings. Then, top with the second slice of bread, forming the sandwich.

Reduce the heat to medium-low. Cover the skillet with a lid and cook for 3–4 minutes, until the fresh mozzarella cheese begins to melt.

Carefully flip the sandwich over. Cover the skillet again and cook for another 3–4 minutes, until the bread is deeply golden and the cheese is completely melted and gooey.

Once cooked, remove the sandwich from the skillet, slice it, and serve warm.
