Pour 4 cups of chicken broth into a medium-sized pot. Bring the broth to a gentle simmer over medium heat.

Once the broth is simmering, add 1/4 cup of pastina to the pot. Stir occasionally to prevent sticking.

Add 1 tablespoon of butter to the pot and stir until it has melted and is fully incorporated into the broth.

In a separate small bowl, crack 1 egg and whisk it vigorously until the yolk and white are well combined and slightly frothy.

While continuously stirring the broth mixture in the pot, slowly pour the whisked egg into the simmering broth in a thin stream. This will create delicate egg ribbons.

Cook for another 2-3 minutes, or until the pastina is tender. Remove the pot from the heat.

Add 1/4 cup of grated cheese to the pot. Stir the mixture gently to combine all ingredients. Serve hot.
