Begin with a thick steak. Season it heavily on all sides with kosher salt.

Insert a wireless meat thermometer into the thickest part of the steak, ensuring it does not touch any bone.

Place the seasoned steak on a wire rack set over a baking sheet. Transfer it to an oven preheated to 120°C (250°F).

Cook the steak in the oven until the internal temperature reaches 48°C (119°F) for medium-rare, or 52°C (125°F) for medium doneness. This can take anywhere from 45 minutes to 1 hour or more, depending on the thickness of the steak.

Once the steak reaches the desired internal temperature, carefully remove it from the oven. Let it rest on the wire rack for a minimum of 10 minutes. This is crucial for juices to redistribute.

While the steak is resting, heat a heavy-bottomed pan (cast iron works best) over high heat until it is absolutely screaming hot. You should see wisps of smoke.

Add a little bit of high smoke point oil to the hot pan, just enough to coat the bottom. Immediately place the rested steak into the pan.

Sear the steak for 1 1/2 minutes on each side to develop a deep, rich crust.

Reduce the heat slightly to medium-high. Add a knob of butter and a couple of sprigs of fresh thyme or rosemary to the pan. Tilt the pan slightly and, using a spoon, baste the steak continuously with the melted butter and herbs for about 30 seconds.
