In a large bowl, combine the dry ingredients: 2 cups of self-raising flour (or all-purpose flour with baking powder), 1 tablespoon sugar, and 1 teaspoon bicarb soda.

Add the wet ingredients to the dry mixture: 1 egg and 1 1/2 cups of milk.

Whisk the mixture until it is just combined. Be careful not to overmix; the batter should still have a few lumps.

Pour 100 mL of hot water into the batter and whisk it in gently. This is the trick for extra fluffiness.

Heat a non-stick pan over medium heat.

Add a small amount of oil to the heated pan.

Pour approximately 1/4 cup of batter per pancake into the pan.

Cook the pancakes until bubbles appear on the surface and the edges begin to set.

Flip each pancake to cook the other side.

Continue cooking until both sides are golden brown. Repeat for remaining batter.

Serve the pancakes immediately with your preferred toppings, such as berries and syrup.
