Preheat the oven to 160°C fan / 180°C conventional.

Line a 12-hole muffin tray with cases or heavily butter them if you don't have any muffin cases.

In a large bowl, beat the softened unsalted butter and dark brown sugar together until pale and fluffy.

Add the 125g of Welsh honey to the butter and sugar mixture and beat again until well combined.

Add the medium eggs one at a time, beating well after each addition until fully incorporated.

In a separate bowl, whisk together the self-raising flour, bicarbonate of soda, ground cinnamon, ground ginger, freshly grated nutmeg, and sea salt. Gently fold these dry ingredients into the wet mixture until just combined.

Add the whole milk to the batter and gently mix until you have a smooth consistency.

Divide the batter evenly between the prepared muffin holes, filling each around two-thirds full.

Bake for 18–20 minutes, or until the cakes are beautifully risen and golden, and a skewer inserted into the center of a cake comes out clean.

While the cakes are still lovely and warm from the oven, carefully prick the tops a few times with a skewer.

Generously brush the 3 tablespoons of Welsh honey (for the topping) over the warm cakes, allowing it to soak in.
