Drain the olive oil from the anchovy fillets. Place the drained anchovy fillets on a cutting board and finely mince them with a knife.

In a small bowl, combine the softened unsalted butter with the finely minced anchovies. Add the finely chopped fresh chives.

Using a fork, thoroughly combine the mixture until the anchovies and chives are well incorporated into the butter. Set aside.

Toast the slices of sourdough bread in a toaster or under a broiler until golden brown and crisp.

Remove the toasted sourdough bread. While still warm, generously spread the prepared anchovy butter mixture over each slice.
