Prepare the mushrooms: Slice the baby bella mushrooms into 1/4 to 1/2 inch thick rounds. Peel the king trumpet mushrooms into long, thin strips.

Assemble the skewers: Thread the sliced baby bella mushrooms and peeled king trumpet mushroom strips onto the wooden skewers, alternating them for even cooking and presentation.

Heat a large skillet or grill pan over medium-high heat. Add 2 tablespoons of cooking oil. Once hot, place a single layer of mushroom skewers into the pan. Cover the pan with a lid to allow the mushrooms to steam slightly and begin to soften.

After about 3-4 minutes, uncover the pan. Using a pastry brush, generously apply jerk seasoning to the exposed side of the mushrooms on the skewers.

Flip the skewers to cook the other side. Apply more jerk seasoning to the newly exposed side of the mushrooms. Continue to cook, flipping and seasoning every 2-3 minutes, until the mushrooms are tender, charred to your liking, and well-coated with the jerk seasoning.

Remove the cooked skewers from the pan and set aside. Add more cooking oil to the pan if needed and repeat the cooking, seasoning, and flipping process with the remaining mushroom skewers until all are cooked.

For an extra burst of flavor, brush the cooked jerk mushroom skewers with additional jerk seasoning just before serving.
