Pat the chicken pieces dry with paper towels. In a medium bowl, toss the chicken with salt, black pepper, garlic powder, and paprika until evenly coated.

Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.

Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

Pour in the chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Stir in the grated Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Continue to simmer for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

Add the fresh spinach to the sauce, a handful at a time, stirring until it wilts completely. This should take about 2-3 minutes.

Return the cooked chicken to the skillet, tossing to coat it evenly with the creamy Tuscan sauce. Season with additional salt and pepper to taste.
