Place the cut chicken breast pieces into a mixing bowl. Add 1 teaspoon of paprika, 1/2 teaspoon of chilli powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1 teaspoon of oregano, and salt and pepper to taste. Mix all ingredients thoroughly by hand until the chicken is well coated.

Place the marinated chicken into an air fryer, ideally lined with parchment paper. Air fry the chicken at 190°C for 12 minutes.

While the chicken is air frying, heat a pan with 1 tablespoon of olive oil. Add the sliced red and yellow bell peppers. Sprinkle the same spices used for the chicken marinade (paprika, chilli powder, garlic powder, onion powder, oregano, salt, and pepper) onto the bell peppers. Stir-fry the bell peppers for 1 minute.

Once the chicken is done air frying, add it to the pan with the sautéed bell peppers. Mix everything together thoroughly. Garnish with chopped fresh herbs, if desired, before serving.
