Heat a splash of vegetable oil in a large skillet over high heat. Season the beef chuck with salt and black pepper on all sides.

Sear the seasoned beef in the hot skillet until a deep brown crust forms on all sides. This should take about 2-3 minutes per side. Transfer the seared beef to your slow cooker.

In the same skillet, reduce the heat to medium. Add the diced yellow onion and minced garlic. Sauté for 2-3 minutes until fragrant and softened.

Stir in the tomato paste and cook for 1 more minute, stirring constantly, to deepen its flavor.

Pour in the red wine (or beef broth) into the skillet. Scrape up all the flavorful browned bits from the bottom of the pan with a wooden spoon. Let the mixture simmer for 1 minute.

Pour the deglazed mixture over the beef in the slow cooker.

Add the crushed tomatoes and Italian seasoning to the slow cooker. Stir to combine all ingredients well.

Cover the slow cooker and cook on Low for 7-8 hours, or on High for 4 hours, until the beef is incredibly tender and easily shredded with a fork.

Once cooked, carefully remove the beef chunks from the slow cooker. Using two forks, shred the beef into bite-sized pieces. Stir the shredded beef back into the rich sauce in the slow cooker.

While the beef is being shredded, cook the pappardelle pasta according to package instructions until al dente. Drain the cooked pasta.

Add the drained pasta directly into the slow cooker with the beef ragu. Toss the pasta thoroughly with the sauce until every noodle is beautifully coated.
