In a bowl, crack 4 eggs. Add 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Whisk the mixture well until combined.

Heat a wok or large pan over medium-high heat. Add 1-2 tablespoons of the 1/2 cup oil. Pour in the whisked egg mixture and scramble until just cooked through but still soft. Remove the scrambled egg from the pan and set it aside.

Add another portion of the oil to the same pan. Add the 200g cooked prawns and 200g crab meat (or chopped seafood sticks). Stir-fry briefly until heated through and lightly seared. Remove the cooked seafood from the pan and set it aside.

In a small bowl, combine 1/2 cup sweet chilli sauce, 1/2 cup soy sauce, 1 tablespoon oyster sauce, 3 tablespoons grated garlic, 1 teaspoon salt, and 1 teaspoon black pepper. Mix all the ingredients thoroughly until well combined.

Add the remaining oil to the pan (if needed). Add the chopped vegetables (3 to 4 types of your choice; carrots, cabbage, fine beans, bell peppers, sweet corn are preferred). Stir-fry until the vegetables are tender-crisp.

Add the 3 cups of cooked and refrigerated basmati/long grain rice (or any leftover plain rice) to the pan with the vegetables. Use your spatula to break up any clumps of rice.

Return the scrambled egg, cooked prawns, and crab meat to the pan with the rice and vegetables.

Pour the prepared sauce mixture evenly over all the ingredients in the pan. Stir-fry everything together, ensuring the sauce is well distributed and all components are thoroughly heated. Do not mix the vegetables for more than 2 minutes after adding the sauce, as they will lose their color and shape and start to release moisture.

Turn off the flame. Add 1 cup chopped spring onions to the fried rice and stir gently to incorporate them for better flavor and taste.

Serve the Chinese seafood fried rice immediately with your favorite sides or simply with chili oil on the side.
