Ensure you have 1 1/2 pounds of cooked lobster meat ready for use.

Bring a large pot of salted water to a rolling boil. Add the 1 pound of pasta and cook according to package directions until it is al dente. Before draining, carefully scoop out 1/2 cup of the pasta cooking water and set it aside. Drain the remaining pasta and set it aside.

While the pasta is cooking, heat 1/4 cup of olive oil in a large skillet over medium-high heat. Add the 1 minced shallot and 6 minced garlic cloves. Cook for 2 minutes, stirring occasionally, until the shallot and garlic are fragrant and slightly softened.

Stir in the 1 pint of halved cherry tomatoes. Continue to cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften and burst, releasing their juices.

Pour in 1/2 cup of dry white wine. Use a wooden spoon or spatula to scrape up any browned bits from the bottom of the pan, incorporating them into the sauce. Allow the wine to simmer and reduce by half, which should take about 2-3 minutes.

Stir in the 1 cup of heavy cream and bring the sauce to a gentle simmer. Reduce the heat to low to keep warm.

Add the cooked pasta directly into the skillet with the sauce.

Add the cooked lobster meat and 1/2 cup of grated Parmesan cheese to the skillet. Toss gently to combine.

Gradually add the reserved pasta water, a little at a time, as needed to achieve a creamy sauce consistency that coats the pasta well. You may not need all of the reserved water.

Season the pasta with salt and pepper to taste. Stir in 1/4 cup of chopped fresh parsley and 2 tablespoons of chopped fresh chives.

Serve the lobster pasta immediately while hot.
