In a bowl, combine the sliced chicken thighs with 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1 teaspoon cornstarch. Mix well to coat the chicken evenly.

In a separate bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, 1 tablespoon shaoxing wine, 1 teaspoon sugar, 1/2 teaspoon white pepper, and 2 tablespoons chicken broth until well combined.

Bring a pot of water to a rolling boil. Add the fresh chow mein noodles and cook for 30 seconds. Drain the noodles immediately and set aside.

Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the marinated chicken and cook for 3 to 4 minutes, stirring occasionally, until browned and cooked through. Remove the cooked chicken from the wok and set aside.

Add the remaining 1 tablespoon of oil to the same wok. Add the sliced onions and julienned carrots. Stir-fry for 2 to 3 minutes until they begin to soften slightly.

Add the shredded cabbage to the wok with the onions and carrots. Continue to stir-fry for an additional 1 to 2 minutes until the cabbage starts to wilt.

Add the boiled chow mein noodles to the wok with the stir-fried vegetables.

Pour the prepared sauce evenly over the noodles and vegetables in the wok.

Return the cooked chicken to the wok. Add the bean sprouts and chopped green onions. Toss all ingredients together vigorously until everything is well combined and thoroughly coated with the sauce.

Serve the Chicken Chow Mein immediately while hot.
