In a large mixing bowl (or stand mixer bowl), combine the 500 grams of flour, 1 package of vanilla sugar, 1 teaspoon of vanilla extract, 20 grams of granulated sugar, and 5 grams of salt.

Pour in the 230 ml of milk, crack in the 2 eggs, and add the 20 grams of fresh yeast and 100 grams of soft butter.

Mix all ingredients together for 10 minutes until you have a smooth, elastic dough.

Cover the dough with a clean kitchen towel or plastic wrap and let it rest in a warm place for 1 hour to rise.

While the dough is resting, prepare the filling. Place 250 grams of frozen strawberries and raspberries (or other preferred fruits) in a pot and heat them over medium heat until softened.

Blend the heated fruits until smooth using an immersion blender. Pass the blended fruit mixture through a fine-mesh sieve to remove any raspberry seeds, collecting the smooth fruit juice in a clean pot.

Heat the strained fruit juice over medium heat. Add 100 grams of gelling sugar and cook, stirring continuously, for 4 minutes, or according to the gelling sugar package instructions, until the jam thickens.

Cover the prepared jam and let it cool down completely while the dough continues to rise.

Once the dough has rested, divide it into 60-gram portions. Roll each portion into a tight, smooth ball.

Place each dough ball on a small square of parchment paper. This will make it easier to transfer them to and from the air fryer.

Cover the dough balls again with a clean kitchen towel or plastic wrap and let them rest for another 2 to 3 hours, or until they have risen significantly and are fluffy. Be careful not to let them over-rise, as this can cause them to become too flat during baking.

Preheat your air fryer to 180°C (360°F). Melt some butter or clarified butter for brushing.

Brush the top of each risen dough ball with the melted butter. Carefully place the brushed dough balls (still on their parchment paper squares) into the air fryer basket, ensuring not to overcrowd it. You may need to bake them in batches.

Air fry for approximately 4 to 5 minutes, or until the top is golden brown. (Note: If using a conventional oven, baking time might be longer).

Carefully turn each Berliner over, remove the parchment paper, and brush the other side with melted butter. Continue baking for another 3 minutes until both sides are golden brown.

Once baked, immediately roll the warm Berliner in granulated sugar to coat. If the sugar doesn't stick well, you can brush them again with a little melted butter before coating.

Let the Berliner cool down completely.

Transfer the cooled jam into a piping bag fitted with a long, thin filling needle. Insert the filling needle into the side of each cooled Berliner and fill with the jam.

Serve and enjoy your homemade Air Fryer Berliner!
