If making homemade tzatziki, combine 1 cup yoghurt, 1 grated and drained Lebanese cucumber, 1-2 crushed garlic cloves, 1 tablespoon lemon juice, fresh herbs of choice, and salt and pepper to season. Mix well and set aside.

Season the 500 grams of lean mince generously with 1 packet of Greek BBQ Rub and mix well until thoroughly combined. If you are only cooking 1-2 servings, freeze any leftover seasoned mince in a ziplock bag. Press it into a thin, flat layer and use the back of a knife or dough scraper to lightly score portion lines before freezing for easy future use.

Press a thin, even layer of the seasoned mince onto one side of each Greek-style flatbread or wrap.

Transfer the flatbreads with the mince side down to a sandwich press and cook for 2-4 minutes, or until the mince is completely browned, cooked through, and golden. Alternatively, cook the mince side down in a frying pan for 3-4 minutes before flipping and cooking for a further 1-2 minutes.

Top the cooked gyros with tzatziki, your favorite salad fillings (shredded cos lettuce, sliced tomatoes, sliced Lebanese cucumber, sliced red onion), 1/2 block feta, fresh dill and/or parsley, and a handful of air fryer chips if using.

Finish with a squeeze of lemon juice and serve immediately.
