In a large bowl, combine the banana ketchup, Sprite or 7 Up, soy sauce, vinegar, Lee Kum Kee oyster sauce, light brown sugar, minced garlic, MSG (if using), and black pepper. Whisk until the sugar is dissolved and the marinade is well combined.

Add the thinly sliced pork butt to the marinade, ensuring all pieces are fully coated. Cover the bowl and refrigerate for 12 to 24 hours to allow the flavors to meld.

Approximately 30 minutes before you plan to grill, place wooden BBQ skewers in a shallow dish filled with water to soak. This prevents them from burning on the grill.

Remove the marinated pork from the refrigerator and let it rest on the counter for about 20-30 minutes. This brings the meat closer to room temperature, ensuring more even cooking.

While the pork is resting, prepare the glaze. In a small bowl, whisk together the banana ketchup, oyster sauce, and sesame oil until smooth. Set aside.

Thread the marinated pork onto the soaked skewers, making sure not to overcrowd them. You can fold the pork slices accordion-style for easier threading.

Preheat your grill to medium heat (around 350-375°F).

Place the skewers on the preheated grill. Cook for 5-6 minutes per side, or until the pork is cooked through and has nice char marks. Halfway through the total cooking time (after about 5-6 minutes on the first side), brush the skewers generously with the prepared glaze.

Continue grilling, flipping and glazing occasionally, until the pork is caramelized and tender. Serve immediately.
