In a food processor, combine the walnuts and old-fashioned rolled oats. Pulse until the mixture is finely chopped and resembles a coarse meal.

Add the pitted Medjool dates, pure maple syrup, chia seeds, vanilla extract, and fine sea salt to the food processor with the walnut and oat mixture. Process on high speed until a sticky dough forms that holds together when pressed between your fingers. You may need to scrape down the sides of the bowl occasionally.

Scoop out portions of the mixture, about 1 tablespoon each, and roll them firmly between your palms to form compact, round energy bites.

If desired, place the unsweetened shredded coconut in a shallow dish. Roll each energy bite in the coconut to coat evenly.
