Prepare the Iced Mocha: Fill four glasses with ice. Pour 250 ml of milk into each glass. Pour 60 ml of strong brewed coffee or espresso over the milk and ice. Top with whipped cream and dust with cocoa powder. Stir to combine just before serving.

Prepare the Potato Wedges: Cut 3 potatoes into wedges. Place the potato wedges into an air fryer basket. Sprinkle generously with salt and Cajun Spice seasoning. Shake the air fryer basket well to ensure the potatoes are evenly coated with the seasoning. Air fry at 180°C for 15-20 minutes, or until golden brown and crispy, shaking the basket halfway through.

Prepare the Cilantro Mix: In a small bowl, combine 1/2 cup chopped fresh cilantro, 2 tablespoons olive oil, and 1 teaspoon Chaat Masala. Mix thoroughly until well combined. This will be used for both the chicken filling and the bread.

Prepare the Chicken Filling: In a medium bowl, combine 2 cups shredded grilled chicken and 1/2 cup caramelized onions. Add half of the prepared cilantro mix (from step 3) to the chicken and onions. Using two forks, mix all ingredients together until well combined.

Assemble the Sandwiches: Take 8 slices of sourdough bread. Spread the remaining cilantro mix (from step 3) onto one side of each sourdough slice. For each sandwich, place two cheese slices on one sourdough slice (cilantro-spread side up). Top the cheese with a generous amount of the chicken, caramelized onion, and cilantro filling. Place a second sourdough slice on top, with the cilantro-spread side facing down onto the filling, to complete the sandwich.

Grill the Sandwiches: Heat a pan over medium heat. Add a drizzle of olive oil to the pan. Place the assembled sandwiches in the pan and grill for 3-5 minutes per side, or until golden brown and the cheese is melted and gooey. You may need to grill in batches.

Serve: Once grilled, remove the sandwiches from the pan and cut each diagonally in half. Arrange the grilled cilantro chicken sourdough sandwich halves on plates alongside the air-fried potato wedges. Serve immediately with the freshly prepared iced mocha.
