Score the pork belly on both the skin side and the meat side. Place the scored pork belly in a bowl.

Add 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, and 1 teaspoon of cumin to the pork belly. Thoroughly rub these spices into the meat side of the pork belly.

Add 1 tablespoon of soy sauce, 1 tablespoon of vinegar, and 1 tablespoon of olive oil to the pork belly. Rub this marinade into the meat.

Place the marinated pork belly skin-side down in a pot. Add 1 cup of water. Bring the water to a boil, then reduce the heat to a simmer. Cover the pot and cook for 45 minutes.

After 45 minutes, carefully remove the pork belly from the pot and place it on a wire rack. Use paper towels to pat the skin thoroughly dry.

Preheat your oven to 180°C. Sprinkle 2 tablespoons of cornstarch evenly over the skin of the pork belly and rub it in. Place the pork belly in the preheated oven and bake for 30 minutes.

After 30 minutes, increase the oven temperature to 200°C. Continue to bake for another 15 minutes or until the skin is crispy and puffed.

Remove the crispy pork belly from the oven, allow it to rest for a few minutes, then slice it and serve immediately.
