While the rice is cooking, prepare the seasoning mixture by combining 1 teaspoon of salt, 1 tablespoon of sugar, and 2 tablespoons of rice vinegar in a small bowl. Stir until the salt and sugar are dissolved.

Prepare the spicy mayo: In a small bowl, combine 1/4 cup of Japanese mayonnaise and 1 tablespoon of sriracha. Mix well until smooth. Adjust sriracha to taste.

Prepare the spicy salmon: Dice the salmon into small, bite-sized pieces. In a separate bowl, combine the diced salmon with the remaining 1/4 cup of Japanese mayonnaise, 1 tablespoon of sriracha, 1 teaspoon of sesame oil, and 2 tablespoons of masago. Mix thoroughly to coat the salmon.

Slice the avocado thinly and chop the spring onion for garnish.

Assemble the sushi pizza: Place a fried crispy nori rice base on a serving board or plate. Spread an even layer of the prepared spicy mayo over the entire surface of the base. Arrange the sliced avocado on top of the spicy mayo layer. Generously spoon the spicy salmon mixture over the avocado. Drizzle additional spicy mayo over the salmon and avocado layers for extra flavor and presentation. Garnish with chopped spring onion and sprinkle with sesame seeds.
