In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Set aside.

In a separate large bowl, whisk the large eggs until light and frothy. Gradually whisk in the cooled melted unsalted butter and vanilla extract until well combined.

While the madeleines cool, prepare the chocolate dip. Melt the chopped dark chocolate in a heatproof bowl set over a saucepan of simmering water (double boiler method), or in the microwave in 30-second intervals, stirring until smooth. Stir in the optional coconut oil for extra shine.

Once the madeleines are completely cool, dip one end of each madeleine into the melted chocolate. Place them back on the wire rack or on parchment paper to allow the chocolate to set.
