Thoroughly wash the 3 pounds of pork neck. Place the washed pork neck into a large pot. Add enough water to the pot to fully cover the pork neck.

Bring the water to a boil. Once the water is boiling, remove the pork neck from the pot and discard the water. This step is done to clean the pork and remove any impurities.

Return the cleaned pork neck to the pot. Add 2 liters of fresh water to the pot.

Season the broth by adding 1 tablespoon of chicken bouillon powder, 1 tablespoon of sugar, 1 tablespoon of salt, 1 tablespoon of fish sauce, and 1/2 teaspoon of black pepper. Bring the soup mixture to a boil.

Once the soup is boiling, reduce the heat to low. Cover the pot and let the pork neck simmer for 1 hour to tenderize.

While the pork neck is simmering, prepare the vegetables. Peel and chop the 2 carrots into desired shapes. Peel and chop the 1 long squash into desired shapes.

After the pork neck has simmered for 1 hour, add the chopped carrots and long squash to the pot with the soup. Continue to simmer the soup until the vegetables are tender, which should take approximately 30 minutes.

Serve the hot pork neck soup with carrots and long squash, accompanied by 1/2 cup of rice.
