Preheat your oven to 400°F. Line a 6-cup muffin tin with paper liners or grease it well with cooking spray.

In a medium bowl, combine the Jiffy corn muffin mix, milk, and egg. Stir until just combined; do not overmix. A few lumps are okay.

Gently fold in the drained canned corn, shredded cheddar cheese, and diced jalapeño (if using) into the batter until evenly distributed.

Divide the batter evenly among the 6 prepared muffin cups, filling each about two-thirds full.

Bake for 18-20 minutes, or until the muffins are golden brown and a wooden skewer inserted into the center comes out clean.

Once baked, remove the muffins from the oven. If desired, brush the tops with melted butter for extra flavor and shine.

Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
