Divide the 300g beef mince into eight equal sized balls, each weighing 75g. Place these beef balls into the fridge until they are ready to be cooked.

In a small bowl, combine the 4 tablespoons mayonnaise, 1 heaped tablespoon very finely chopped gherkins, 1 teaspoon yellow mustard, 1 teaspoon garlic granules, 1 teaspoon onion powder, 1 teaspoon paprika, and 1 tablespoon pickle juice from the gherkin jar. Mix all ingredients thoroughly until well combined. Refrigerate the sauce until it is needed.
Set up your barbecue for direct cooking. Once the BBQ is hot, place a ProCook cast iron flat griddle on top to pre-heat thoroughly.

Place the prepared beef balls onto the hot griddle. Immediately top each beef ball with a generous handful of the very finely sliced white onion and jalapeno.

Use a ProCook burger press to firmly smash each beef ball down into a thin patty, ensuring the onions and jalapenos are pressed into the meat. Allow the burger to cook undisturbed until a dark, crispy crust has formed on the bottom.

Flip the patty over. Immediately lay one slice of processed American cheese on top of the flipped patty. Carefully tuck any stray onions and jalapenos that were on top of the patty underneath it to prevent them from burning on the hot griddle.

Once cooked to your liking, stack two of these patties on top of each other to form a double patty burger.

To assemble the burger, take the bottom half of a toasted brioche bun and spread a generous amount of the prepared burger sauce on it. Add a layer of shredded lettuce on top of the sauce. Carefully place the stacked double patty on top of the lettuce. Finish with more burger sauce drizzled over the patties. Finally, place the top half of the brioche bun to complete the burger.
