Heat the olive oil in a large skillet or frying pan over medium heat. Add the diced red, yellow, and orange bell peppers and the diced red onion. Sauté for 8 to 10 minutes, or until the vegetables are tender-crisp.
Stir in the garlic powder, cumin, and chili powder. Cook for 1 minute more, stirring constantly, until fragrant.
Add the rinsed and drained black beans and drained corn to the skillet. Cook for another 3 to 5 minutes, stirring occasionally, until heated through.

To assemble the tacos, spoon the rainbow veggie filling into the warm tortillas. Top with diced or sliced avocado, chopped fresh cilantro, and a dollop of Greek yogurt or sour cream, if desired. Serve immediately.
