Preheat your oven to 275°F. Remove the membrane from the back of the ribs. Pat the ribs completely dry with paper towels. Rub the entire surface of the ribs with yellow mustard to act as a binder for the seasoning.

In a bowl, combine the 1/2 cup brown sugar, 2 tablespoons smoked paprika, 2 tablespoons garlic powder, 2 tablespoons onion powder, 1 tablespoon salt, and 1 tablespoon black pepper. Mix well until all ingredients are thoroughly combined.

Generously season both sides of the ribs with the prepared dry rub, ensuring full coverage.

Tightly wrap each seasoned rack of ribs in aluminum foil. Place the wrapped ribs on a baking sheet. Bake in the preheated oven at 275°F for 3 hours.

While the ribs are baking, combine 1 cup ketchup, 1/4 cup brown sugar, 1/4 cup apple cider vinegar, 1 teaspoon mustard powder, 1 teaspoon liquid smoke, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon Worcestershire sauce, 1 teaspoon salt, and 1 teaspoon black pepper in a bowl. Stir well to combine all ingredients.

After 3 hours, carefully remove the ribs from the oven and unwrap them. Increase the oven temperature to 400°F. Generously brush both sides of the ribs with the homemade BBQ sauce.

Return the sauced ribs to the 400°F oven and bake for an additional 15-20 minutes, or until the BBQ sauce has caramelized and slightly thickened.

Remove the ribs from the oven, let them rest for a few minutes, then slice and serve.
