Place the diced mangoes and 1/4 cup of the granulated sugar into a blender or food processor. Blend until completely smooth. Set aside.

In a large bowl, whisk together the heavy cream, milk, remaining 1/4 cup granulated sugar, fresh lemon juice, lemon zest, vanilla extract, and salt until the sugar is fully dissolved.

Pour the cream mixture into your ice cream maker's freezer bowl and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes, or until the mixture has the consistency of soft-serve ice cream.

During the last 5 minutes of churning, gradually add the pureed mango mixture to the ice cream maker. Continue churning until well combined and the ice cream is thick.
